Mackerel with Creamy Orzo & Silky Cauliflower Purée

Mackerel is one of the most underrated fish you can cook at home. Rich, full of flavour and packed with healthy omega-3s, it deserves far more attention than it gets.

For this dish, I wanted to create something that feels elegant without becoming complicated. Crispy pan-seared mackerel sits on a bed of silky cauliflower purée, finished with creamy Parmesan orzo, fresh herbs and a squeeze of lemon to balance the richness of the fish.

It’s the kind of meal that looks like it belongs in a restaurant but is surprisingly straightforward to recreate in your own kitchen. Every element complements the next, creating a plate that’s comforting, fresh, and beautifully balanced.

Ingredients

For the Mackerel
  • 2 fresh mackerel fillets
  • Salt
  • Freshly cracked black pepper
  • 1 tbsp olive oil
  • 20g butter
  • 1 garlic clove, crushed
  • A few sprigs of thyme
Cauliflower Purée
  • ½ cauliflower, chopped
  • 250ml milk
  • 250ml water
  • 20g butter
  • Salt
  • White pepper
Creamy Orzo
  • 150g orzo pasta
  • 1 small shallot, finely diced
  • 1 garlic clove, minced
  • 15g butter
  • 100ml vegetable stock
  • 50ml double cream
  • 30g grated Parmesan
  • Small handful of parsley, chopped
  • Zest of ½ lemon
Garnish
  • Fresh parsley
  • Micro herbs (optional)
  • Lemon wedge
  • Extra virgin olive oil

Method

Step 1 – Cook the Cauliflower

Place the cauliflower into a saucepan with the milk and water.

Season lightly with salt.

Simmer for around 20 minutes until completely tender.

Drain, reserving a splash of the cooking liquid.

Blend with butter until silky smooth.

Adjust seasoning and consistency before keeping warm.

Step 2 – Cook the Orzo

Cook the orzo in salted boiling water until al dente.

Drain.

Meanwhile, soften the shallot in butter over medium heat.

Add the garlic and cook for another minute.

Pour in the vegetable stock and reduce slightly.

Add the cream and Parmesan.

Fold through the cooked orzo, chopped parsley and lemon zest.

Season to taste.

Step 3 – Cook the Mackerel

Pat the fillets dry and season both sides.

Heat olive oil in a frying pan.

Place the fillets skin-side down.

Press gently for the first 20 seconds so the skin stays flat.

Cook for 3–4 minutes until the skin becomes crisp.

Add butter, garlic and thyme.

Turn the fish over and baste continuously for about 30–45 seconds.

Remove immediately to avoid overcooking.

Plate

Spread the cauliflower purée across the plate.

Spoon the creamy orzo alongside.

Place the crispy mackerel on top.

Finish with parsley, micro herbs, a drizzle of olive oil and a squeeze of fresh lemon.
